- Observed improper storage of food items. - Observed boxes of pita bread stored directly on floor of walk-in cooler, boxes of pizza sauce and flour stored on floor of kitchen.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. - Dicontinue stroring food items directly on floor of facility. Provide box or pallet to keep items at least 6 inches off the floor.
- Critical: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. - Observed opened TCS items (shredded mozz in walk-in cooler, diced chicken in prep cooler) being stored without a date mark.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. - Equipment is not approved by a recognized testing agency. - Observed homestyle freezer and microwave in kitchen. Per conversation, homestyle freezer is temporary until commercial freezer is repaired.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency. - Remove homestyle freezer from facility when commercial freezer is repaired. Replace homestyle microwave with NSF approved commercial grade microwave.
- Non-food contact surfaces of equipment are dirty. - Observed a build-up of dust on oven hood.
Nonfood-contact surfaces of equipment shall be kept clean. - Clean oven hood to remove build-up and prevent contamination of food.
- Observed no supply of hand cleaning liquid, powder or bar soap at the handwashing sink(s). - Hand soap pump not dispensing liquid at hand sink in kitchen.
To ensure proper cleaning of hands, each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. - Repair soap pump. Provide additional soap until pump is repaired. Correct By: 14-Sep-2015
- Observed personal care items that were not stored in a designated employee storage area. - Observed box of cigarettes, lighter, car keys stored on prep cooler being used as storage for food-contact containers.
Employees shall store their personal care items in facilities as specified under (K)(2) of rule 3717-1-6.2 of this code. - Discontinue storing personal items near food or food-contact surfaces. Provide designated area for personal items.
