To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. - Clean and sanitize cutting board to remove build-up and prevent contamination of food.
- Observed light bulbs or heat lamp that were not properly shielded or coated where required. - Observed light bulb in walk-in cooler without shield.
Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.

Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
- Observed light bulbs or heat lamp that were not properly shielded or coated where required. -Observed an uncovered compact flourescent bulb in the walk-in cooler.
Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. -Provide a shield or use a coated bulb. Recommend using a higher wattage bulb to provide more light.

During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored as described in this rule. -Store knives on a clean surface, magnet, or knife box. -Store spoons, scoops, etc with the handle not in contact with food.
- Critical: TCS foods were not being held at the proper temperature. -Observed food in the open top refrigerator at 52F.
Except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 41°F or less. -Move food to a refrigerator that maintains 41F or below. -Repair refrigerator to maintain proper temperature.
- Observed an unclean storage area for refuse, recyclables, or returnables. -Observed broken glass, cardboard, and grease outside of dumpsters in the dumpster area.
A storage area and enclosure for refuse, recyclables, or returnables shall be maintained clean and free of unnecessary items.
- Critical: Observed the presence of live insects, rodents, and other pests. -Observed several flies throughout the kitchen and bar area.
The presence of insects, rodents, and other pests shall be controlled by routinely inspecting incoming shipments of food and supplies, and routinely inspecting the premises for evidence of pests, using methods such as trapping devices or pesticides, and eliminating harborage conditions. -Contact pest control service for trapping devices. -Remove trash from kitchen on a frequent basis.
