- Observed improper use and/or maintenance of wiping cloths. Observed wiping cloths being stored on counted in between use.
(1) Cloths that are in use for wiping food spills from tableware and carry-out container that occur as food is being served shall be maintained dry and used for no other purpose
- Observed improper storage of food items. Observed raw chicken and vegetables being stored on floor in walk in cooler.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. Store all food items at least 6 inches off of the floor.
- Observed accumulation of soil residue on nonfood-contact surfaces. Observed excessive build up on cart with shelving for trrays.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
- Critical: Observed improper storage of poisonous or toxic materials. Observed chemicals being stored on prep table next to bowls of open flour.
To prevent contamination, poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, or single-service or single-use articles by: 1) Separating the poisonous materials by spacing or partitioning

- Observed improper use and/or maintenance of wiping cloths. Wiping cloths used for food preparation surfaces were not stored in sanitizer between uses. Were laying on counter adjacent to the food prep cooler.
Immediately store in sanitizer between uses to prevent the growth and spread of bacteria on surfaces.
- Critical: Equipment food-contact surfaces or utensils are dirty. There is a buildup of food debris around the can opener blade.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. Immediately clean the can opener, and also on a daily basis. Use a fine bristle brush to get a hard-to-reach places.
- Observed an outer opening, window, or door without proper protection against the entry of insects and rodents. Front exterior door was open without a screen to protect the opening.
To prevent contamination, outer openings of an FSO or RFE shall be protected against the entry of insects and rodents as specified in this rule. Close the door immediately to prevent the entry of flying insects. Note: The door was closed during the inspection.
