- Critical: Observed food employee caring for or handling animals, fish, shellfish, or crustacea without washing hands. Observed og in bar - remove dog from bar/food area as soon as possible to prevent cross contamination.
To prevent contamination, food employees may not care for or handle animals that may be present. If food employees wash their hands, they may handle or care for their own service animals, fish in aquariums, or molluscan shellfish or crustacea display tanks.
- Critical: TCS foods were not being held at the proper temperature. Observed food items at 60-65F at reach in cooler (butter & cheese). Cold hold foods at or below 41F. Repair reach in cooler.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
- Critical: Utensils and food-contact surfaces of equipment were not sanitized at the required frequency. Clean and sanitize interior of ice machine to remove mold buildup.
To prevent pathogen growth, utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning.
