Observed a build-up of dirt and debris. Observed build up underneath floor mats in bar area, and debris on shelving underneath prep table in kitchen. The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Clean floor frequently and thoroughly to deter pests.

Observed buildup of grease on the hood system. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Thoroughly clean the hood system to remove all grease.
