Critical: TCS foods were not being held at the proper temperature. Observed american cheese being held at 48F. Cheese was stacked so that it was over the top of the holding unit in the prep top cooler. To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less. Operator removed cheese so that it would be held properly in the unit, cheese below level of holding unit in prep top was at 41F and below.
The physical facilities are not being maintained in good repair. Water is leaking from pipe under 3 compartment sink underneath sanitizer compartment. Light bulb is no longer working in walk in freezer. The physical facilities shall be maintained in good repair. Management is aware of these issues and is in process of repairing leak and will replace light bulb.
