Food employee(s) did not have their hair effectively restrained. To prevent contamination, food employees shall effectively restrain or cover hair to keep their hair from contacting exposed food, clean equipment, utensils or linens or unwrapped single-service or single-use articles.
Equipment is not approved by a recognized testing agency. Two home style griddles (Bella) were in use in the commercial mobile unit. Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency. Discontinue use of these home style griddles. Only NSF approved commercial grade equipment (or the equivalent) may be used.
Equipment food-contact surfaces and utensils were not being sanitized. The knock down mobile was serving food separately from the required 3 compartment utensil wash sink and hand sink. Equipment food-contact surfaces and utensils shall be sanitized. You must have the required sinks (as licensed) to facilitate hand and utensil washing. Corrected--3 bucket system used at booth with hand wipes. In the future the sinks must be present or the knock down booth may not operate
