  • Critical. Potentially hazardous food not held at 135 degrees Fahrenheit or above. Chicken strips-holding 105 F-advised reheat to 165 then hold above 135. Corrected On Site.
  • Critical. Observed employee engage in food preparation, handle clean equipment or utensils, or touch unwrapped single-service items, without washing hands. Employee, cook touched raw burgers then touched rte buns without washing and changing gloves.
  • Observed employee with ineffective hair restraint. Managerss hair in many braids but no restraint to keep them from falling or her from brushing them aside. Corrected On Site.
  • Hood filters are not tight-fitting and firmly held in place - leaving open spaces. For reporting purposes only.
  • Critical. Hand wash sink lacking proper hand drying provisions. Neither sink-north or south side. Corrected On Site.
  • Wet mop not hung to dry.
  • Critical. No proof of required employee training provided. All public food service establishments must provide the division with proof of employee training upon request, including, but not limited to, at the time of any division inspection of the establishment. Several new employees-training this weekend.

  • Critical. Cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures. Walk-in cooler not operational at this time-repairman has been called. No PHFs in cooler at this time.
  • Observed ice scoop with handle in contact with ice-ice maker at rear af facility.
  • Observed employee with no hair restraint. Female employee working on cookline etc.
  • Observed equipment in poor repair. Back splash guard on flat top grill does not attach with propper fit-one side, one slip notch hanging leaving guard hanging.
  • Observed single-service articles stored without protection from contamination. Black clam shell take-out boxes. Corrected On Site.
  • Critical. Observed handwash sink used for purposes other than handwashing-hand wash sink by meat grinder has basin full of ice.
  • Observed wall in disrepair-wall behind 3 bin sink has cracked and split wall covering.
  • Observed ceiling in disrepair-ceiling tile over ice bin heavily damaged and black with mold like growth. Metal Cross bars and tile heavily damaged. Repeat Violation. This violation must be complied at next unannouced routine inspection to avoid administrative actions.
  • Lights missing the proper shield, sleeve coatings or covers. 3 flourescent lamps above grill area of kitchen.

  • Observed ceiling in disrepair-ceiling over ice maker and bin heavily stained with black and white fury-mold/mildew like substance. Repeat Violation. Ceiling must be smooth, durable and non absorbant. Repeat Violation.
