  • Basic - Reach-in cooler gasket torn/in disrepair. Two door reach in cooler next to walk in cooler. Also reach in cooler drawers under grill top on cook line.
  • High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Cook cracked egg and then grabbed shredded cheese from reach in drawer to make omelet. Cook did not wash his hands between cracking egg and grabbing cheese. Corrective action, Explained to manager and cook that after cracking eggs, hands must be washed before handling ready to eat food.
  • High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee grabbed toast after it came out of toaster with Bare hands at server station. Corrective action, Explained to manager and employee no barehand contact can be made with ready to eat food after it has been heated to 145°. Employees are in and out of cooler constantly. Corrective action had manager move items to walk in cooler for rapid cooling. Also suggested to manager that he store items further back in cooler since cooler is constantly opened and closed.
  • High Priority - Raw animal food stored in same container as ready-to-eat food. Individual butter packets stored in same container as raw steak in reach in cooler drawer on right side of cook line. Manager removed butter packets and discarded. **Corrected On-Site**
