- Wet wiping cloth not stored in sanitizing solution between uses. Do not leave wer-wiping cloths lying on countertops; store them in sanitizing buckets between uses.
- Observed build-up of grease on nonfood-contact surface. Clean accumulated grease from the outside surfaces of the BBQ smoker.
- Cleaned and sanitized equipment, utensils, linens or single-service not properly stored. Whewrapping silverware in napkins, be sure that any exposed surfaces are handles only.
- Observed clean equipment stored on floor. Do no store clean-cutting board on the floor. Corrected On Site.
- Plumbing system in disrepair. Repair the leaking-cold-water faucet in the men's restroom.
- Observed grease accumulated on kitchen floor. Clean grease from floor beneath deep friers.
