  • Basic - Food stored on floor. Observed container of cooking oil stored on floor in dry storage/3 compartment sink room. Advised establishment that food products need to be at least 6 inches off the floor. **Warning**
  • Basic - Interior of microwave soiled with encrusted food debris. Observed interior of microwave splattered with spaghetti sauce. **Warning**
  • Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Observed packaged ground beef thawing in prep sink with no water running over it. Advised cook of the acceptable methods for thawing food products and beef was moved to a cooler. **Corrected On-Site** **Warning**
  • High Priority - Establishment operating without a license from the Division of Hotels and Restaurants. Operator must obtain a public food service license from the Division of Hotels and Restaurants within 60 days. Observed Tracey and Jonathan Dowdy working as owners of establishment. Observed the Dowdys took over establishment at the end of September 2013 from Mr. Magliocca. At callback for Mr. Magliocca on 11/12/13, observed new owners and an ADHOC Routine was completed for the Dowdy ownership with the end result being a warning with a 60 day callback. Callback was completed and complied on 1/22/14 and inspector was advised that Tonya Randall was going to be new owner effective that week. on complaint inspection 2/4/14, inspector advised that Mrs. Randall was no longer taking over and that paperwork was in process to have establishment cook Kerry become new owner. Mr. Tracey Dowdy was present at complaint inspection and assumed responsibility as owner during change until himself and Kerry can complete the necessary paperwork. This violation must be corrected by April 7, 2014. Submit a license application and payment to DBPR/Bureau of Central Intake Unit, 1940 N. Monroe St., Tallahassee, FL 32399-0783. **Warning**
  • High Priority - Cheese/milk/creamer/other dairy products cold held at greater than 41 degrees Fahrenheit. Observed open container of feta cheese held at cold hold prep unit at 61°F. Cook on staff advised that the feta was not opened today and had been in unit overnight. **Warning**
  • High Priority - Cut tomatoes cold held at greater than 41 degrees Fahrenheit. Observed diced tomatoes held in unit overnight and not prepared the day of inspection, at 56°F. Observed cook dispose of tomatoes. **Corrected On-Site** **Warning**

  • High Priority - Vacuum breaker missing at mop sink faucet. Observed hose connected to mop sink faucet with no backflow preventer in place. Advised establishment of backflow preventer and presented photos of the device found by the inspector online. **Warning**

Observed 3 compartment sink set up with a quaternary ammonium sanitizer and no chemical test strips available. Observed pool and spa test strips in shelf above 3 compartment sink. Advised establishment that pool and spa test strips are not approved as an acceptable test kit in a food service establishment. **Warning**

Mrs. Randall wAs on staff at beginning of inspection, but left during inspection. Observed Kerry on staff in the kitchen and Courtney running the front of the house, both employed since about May 2013 (through owner changes) with current owner being in place since end of September 2013. Observed no proof of state approved employee training for either Courtney or Kerry.   • Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Over cook line. Operator states lens covers have been ordered.
  • Basic - No handwashing sign provided at a hand sink used by food employees. At hand sink on cook line, as well as next to three compartment sink. Operator states signs are away being laminated at the moment.
