Observed the following items in cooler: liquid eggs 48°, 51°, seasoned onions 51°, liquid whites 50°, sausage egg burrito mix 54°, shredded lettuce 50°. Items were moved to walk in cooler. Inspector observed digital thermometer on exterior of unit not functioning as well.
  • Basic - Grease accumulated under cooking equipment. Observed under both fryer systems, but especially under the fryers used to cook chicken products.
  • Basic - Wet mop not stored in a manner to allow the mop to dry. Observed 2 mops near mop sink with heads bunch up on the floor.
  • High Priority - All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Observed bottom half of Traulsen cooler near office not functioning properly. Observed the following items in cooler: liquid eggs 48°, 51°, seasoned onions 51°, liquid whites 50°, sausage egg burrito mix 54°, shredded lettuce 50°, packaged folded egg patties 50°. Staff said products had been out and in use and returned to cooler at about 10:30am. At an hour later, products were observed at the same temperature. Items were moved to the walk-in cooler.
  • High Priority - Employee rubbed hands together for less than 10-15 seconds while washing hands.
  • High Priority - Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands.
