  • Critical - Reheated food for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours, soup reheating in table top steam table for 1 hour is at 56 degrees F. Recommended reheating soup on stove first, getting soup to 165 degrees F within 2 hours then putting soup to hot hold on steam table.
