At least people in Denver or Colorado in general are much less materialistic than the coasts. But yeah OP might be better off looking for a more under the radar city.

Can't think of any midwest cities with great outdoor options, at least not on Denver's level.

If you had a fairly specific place size range, the choice narrows quite a bit. Without that, you might have a hard time narrowing it down to a few choices and the same for recommendations.

If a person likes mountains and skiing, of course they will not be interested in the Midwest.

Michigan and Minnesota do have some significant outdoor areas. I've been to the Boundary Waters Canoe Area in Minnesota a few times. It's a designated wilderness area of more than one million acres. Of course it's not close to any large cities, unless one considers Duluth large

Michigan has a lot of shoreline on Lakes Superior, Michigan, and Huron. Some beach areas and even sand dunes. Huron-Manistee NF is not a wilderness area, but it has a bit over 100 miles of hiking trails.

I've skiied in both of those states as well as in Wisconsin, but of course this is a far cry from anywhere in the western US.
