Thanks everyone-- In the end, I'm taking the simplest route-- The Sony HT-A5000 soundbar & small subwoofer. The access points in the ceiling? Maybe one day if I can route power to those ceiling locations and devise a elegant-looking solution with the wireless. I wish the Sony surrounds came in white though. Funny enough, the TV I was designing all this around STILL hasn't arrived yet. Ordered it from Costco on 7/3, but they've put off the actual delivery FOUR times now. I did see the latest Samsung OLED, and with my "Partner" discount it would be within 50 bucks of the Sony... BY all specs it seems that they're equivalent is some areas, but the Sammie is better in others. As I get older, I look to more convenience, so IDK if I want to unwind all the work I did and chase down a different TV.... But, still, if Costco keeps d***ing around.....

I have a Samsung QN90A. Big fan. I also had a Sony which was nice, but didn't do 120hz gaming. It got moved to another room.

It was a toss between the Samsung and the Sony OLED. I wound up choosing the Samsung. Nothing against the Sony, I just liked the Sammy better, and it gets a hell of a lot brighter than the Sony did (I have a bright room with a sliding door directly across from the TV unfortunately). The only thing missing from the Samsung is Dolby Vision, which so far I haven't missed.
