I bought some Fettuccine Miracle Noodles from Walmart, $3.98 for the 7 oz bag. It makes 2 serving at 5 calories a serving. The preparation is a little different than wheat noodles, but it doesn't take long. After they were washed, boiled, drained and heated in a pan, in another pan I sauteed up some garlic, broccoli, green onions, red onions, red pepper, etc. Then I stirred and tossed in the cooked Miracle Noodles along w/ some spices, cut up apple and pineapple, Sriracha sauce, a light sprinkling of Parmesan cheese, salt and pepper, etc.

Delicious! I ended up eating both servings, and even w/ the stuff I added it came to maybe 150 calories for both servings together. That truly is a miracle! The taste is neutral, and while the texture is not exactly like wheat noodles, once you add your sauteed fixins it tastes and behaves very well. I'll do this again and prepare the noodles in different ways to see if it is better or the same. This 150 calorie meal would have been something like 500-550 calories with traditional fettuccine.

They're generically known as Shirataki or Konjac noodles. Flour is also available, though expensive. They're made from the root of a tropical plant.

I used the Miracle brand noodles a lot for a while, but got turned off to the texture.

Konjac is pretty amazing.

We were given some Konjac noodles to try. It is certainly a different type of texture and with extremely low carbs.

I've just tried Noodle Revolution, made with egg whites and super low carbs etc. HORRIBLE!!! Literally, no chew, no taste, slimy and disintegrate, literally, in your mouth.

I tried them years ago. They look fantastic, and if you’re following a low carb way of eating, that’s very appealing! I remember being very excited to eat noodles again! But to me, even after rinsing and cooking properly, they tasted like big ole cut up rubber bands. Yech.

Maybe I cooked them wrong, maybe they’ve gotten better since then.

If texture bothers you ...after washing, let drain for longer than usual.
In a large frying pan, I use org toasted Sesame Oil , spread them out well, some soy sauce - turn on low and
forget about them, uncovered, lol...flip them later...forget about them again.
Worked for me. Then add your stir fry of choice.

Hope that helps somebody. But, $4 was higher than I had ever seen, search around, imo.

Oh, I JUST bought those noodles on sale at Safeway in CO for $1.99.
Also, What helped the over texture was adding Nutritional yeast to the noodles...so along with
veggies, esp, bok choy in the mix I didn't notice the texture at all...the bok choy is a bit chewy.
Adding some Asian Chili Garlic Paste along with soy sauce+whatever, was also a good idea.
I think it's icky the water they are in ALWAYS smells so fishy...after washing a lot and draining I still
squeeze and pat a bit with a paper towel.
