Bought a red copper pan and while I was there, bought the ceramic knife set and amazed at how sharp they are.
Q: any one have experience with these ---- wonder how long the sharpness will last and maybe how to sharpen same.

You'll need a diamond hone to sharpen them or go to a knife sharpening service that can has one. The edge lasts a very long time, but it also takes a little longer and more concentration to bring up a fresh edge. Congrats on the new knives!

I bought a ceramic knife over a year ago and it is still sharp enough to slice tomatoes with ease. I've never had it sharpened. I figure if it gets dull enough or shatters I'll just buy another.

We purchased one of the electric sharpeners specifically made for ceramic knives. About $30 on amazon.

If it's a Kyocera brand, they will sharpen it for free, I think, but after doing that once, the postage fee made us look to buy our own sharpener.

I have the chef knife and pairing knife. Use both multiple times a day. They ARE wonderfully sharp and light.

I agree, I bought the 3 knife set with potato peeler from Bed Bath & Beyond --- very reasonable, don't like the pot/peeler but I love the knifes.

My oldest ones go back 30 years. Pocket and kitchen knives from Boker. Never needed sharpening. Please use wooden or plastic cutting boards.

I bought a fixed-angle knife sharpener online for less than $30. It comes with three sharpening stones, and you can purchase diamond stones for use with ceramic knives. Now, all my knives are as sharp as razors.

Oh course, everyone knows not to put knifes in the dishwasher? My dh and kids would do that every time if I didn't watch them! Don't soak the knifes, either. Just a quick wipe, rinse, and dry, don't use anything abrasive to clean, minimal amount of soap, like one drop of Dawn.
