I was gone for a couple of days so didn't pick my vegetable garden. Combined with a couple of rainy days I have lots of cucumbers that are really best used in a sauce or soup (fat and a bit seedy).
I'm thinking about making some tzatziki sauce and some cucumber soup.
I just read something about freezing cucumbers and using them in recipes later.
Would you freeze the cucumbers and use them later for a soup or sauce or would you make the recipe and freeze it?
I figure I have nothing to lose either way. I am just wondering what others would do.
I would freeze the recipe and then for maximum crispness serve it partially thawed. I've only had refrigerator pickles done this frozen way and that's how I served them.
Cucumbers have so much water in them that I wonder what the end result would be in tzatziki unless you salted and drained them first before mixing and freezing.
I have not tried but am pretty sure they will not freeze well regardless of what you want to use them in.
That's what I thought also so I've never tried it before. There seem to be lots and lots of recipes online to do it. They need to be really well drained so for a soup, sauce or smoothie they might work well.
I think I'll try it a few different ways. I figure if I make soup and freeze it, the worst that can happen is I turn it into a base for another soup.
Just for fun, I'm going to grate one of the cucumbers and freeze it.
Obviously it won't be the same consistency as something freshly picked.
I feed/fatten up the deer with any garden extras..... I have many neighbors giving me veggies...im not veggie fan so I enjoy feeding the deer......fun to watch and I love venison!!
