The Belgium's traditional dip for their frites is
Sauce andalouse, with
Aioli originating from the Catalan region of Spain and neighbouring France.
I mainly just have salt and vinegar with my chips, however there are lots of popular options these days, and I do like some dips including sauce andalouse and aioli.
