I belong to a local foodie group called The Tasting Collective (actually, a national group with chapters in various cities).

We had our monthly dinner at ZAI downtown adjacent to the Container Park. Two thumbs up.

The Tasting Collective is an interesting organization for anyone who likes to sample new restaurants. It isn't limited to Las Vegas. The idea is about once/month they "rent out" an entire restaurant and the chef prepares a prix fix menu for the members. We've attended perhaps 8 or 10 of them and really enjoy the events. Typically, the restaurants are fairly new. The chef interacts with the audience & does Q&A. It is a lot of fun.

Sounds very interesting and I looked into it before. I used to go to wine tasting dinners and enjoyed them a lot. At age 70, I find I can't consume more than small quantities of food or alcohol at one sitting. I don't eat much in a 24 hour period and try to eat just a few smaller meals during the day. Eating and drinking is not as much fun as it used to be, dammit!

I'm only a few years younger than you, but I hear you. At this most recent event, I asked for a "to go" box to take the salmon home as the rest of the meal provided more than enough protein for me. I had half the salmon the next day, and the other half the day after that. Perfect.
