Does your rhubarb (is you are growing it) have red or green stalks?
Are the green stalks ok to eat.:hand:
I know the leaves are off limits (although something in my garden likes them).

I prefer hot house red rhubarb...but that is a tricky thing to do...

Happy trails....HW

We grow both here in IL. Will be bringing about 6 plants up to Timberon to transplant. They are red stalks. But yes you can eat both types of stems. Just not the leaves. I have found the green is a bit more tart so you have to do more sugar.

How many plants do you have? They do take a lot of water to really be good.

Jane, have you ever made strawberry/rhubarb pie. My mother made it every summer growing both the strawberries and rhubarb ( red stalk ) in our garden. One of the family favorites.
