So I'm guessing that hiking to the top of Camelback Mountain to see the Phoenix sunset is pretty much a no-go? I mean, that would leave you climbing back down in the dark. So does this mean that nobody has ever seen the sunset from the top of the mountain?

I'm sure more than a few people have hiked up there at night, even though the trailhead and trails are officially open only from sunrise to sunset.

For a completely legal hike after dark, the Piestewa Peak summit trail is open late, and I can often see hikers with headlamps from my house. I'm sure the sunset is great, but I really see a lot of hikers on nights with a full moon.

Not at all. Unless you have mobility issues you'll be back at the car right around dark, assuming you start the descent just after the sun sets. You'll want to use a headlamp or flashlight for the last part of the descent, if for no other reason than spotting any snakes on the trail (not common, but I've seen a few over the years).

Personally when I lived in Phoenix I did sunrise or sunset hikes up on North Mountain. It was an easy enough hike up to the top that I could even convince my wife to join me on occasion.
