For a fast, easy, non fussy way to make good macaroni and cheese, my mother's old recipe using Velveeta. I know, Velveeta seems disgusting but we're talking EASY/FAST and good.
Boil some elbow macaroni
Meanwhile, cut and tear up Velveeta cheese into chunks.
Drain the macaroni, put some into a large Pyrex bowl, cover with some flour and some cheese--not a lot of flour, just a thin layer.
Repeat a few times--macaroni, flour, bits of cheese. Probably three layers.
Then pour milk over all of it until you can see milk at the top.
Bake at 350. It makes its own sauce.
Amounts don't really matter--just throw it in the bowl. No measuring needed.
Croutons are optional--butter some bread and cut it into little cubes. Put them on top of the macaroni and cheese. This recipe comes out really gooey and cheesy. For those who can get past the Velveeta, it's real comfort food.
