Another dish that I am making for Thanksgiving:
2- 10 oz bags of california blend veggies-Broccoli, cauliflower carrot mix
2 cans cream of mushroom soup
2 cups shredded swiss cheese
1 cup sour cream
1 large can french's fried onions
1/2 tsp pepper
2/3 cup whole milk

In a glass bowl covered with a lid or plastic wrap cook vegetables for about 10 minutes in the microwave or you can steam them on top of the stove until almost soft. Drain and set aside. Mix sour cream, mushroom soup, black pepper and milk add vegetables and mix well. Pour into a 9X13 baking dish. Top with onions and swiss cheese like this: one row of cheese, one row of onions repeat. Can be arranged vertically or diagnally. Bake on 350 for 35 minutes.

I used to make this in the '80s. Had forgotten all about it. Everybody liked it.

I brought it to my In-Laws, who were still heating veggies out of a can, for Christmas. After that everyone used to request it every year.

Later I started making it out of fresh vegetables parboiled before assembling casserole and that was even better.

This recipe I think may have been on the back of those French fried onions in the can many years ago.
We love it.
