It’s supposed to serve 4, but the 2 of us just had a little leftover for lunch. Like I mentioned above, I didn’t use all 8 oz of the pasta.

The second time I made it, I used 3 cups of uncooked penne, and it was plenty for 4 people.

Just another quick note...I like it better with cherry tomatoes than grape tomatoes, because of the ratio of tomato skins.
