Carrots roasted with ginger, honey and a bit of garlic are one of my favorites.

Boiling them in cider might work. Try it and let us know how it works

My best carrot recipe:

Peel the carrots and cut them into coins. Barely cover them in water to which you add bouillon powder, some very thinly sliced onion, and a smallish lump of butter. Do not boil, simmer until just tender and remove from the liquid to serve.

I ended up just steaming them plain. I don't care for them myself, and somehow they ended up getting left back in the kitchen, and by the time anyone noticed everyone was too full to bother with them. so, everyone got a very healthy portion of Carrots with their take home boxes.

I haven’t heard of that, but I bet it would be good. I always cook carrots in water with ginger and a bit of brown sugar and butter.
