Hi all

I dont have a smoker (yet), so I will try to do this in my oven. I have a 4lb brisket, and I will cook it @ 220f.

About how long should I expect it to come up to 195?

Depends on the oven. I would cook it at 375f and would take around 2 hours or so. At 195 inside temp may take 4ever at 220f.

5-6 hours - maybe 7 at 220. Slow lo is the way to go or you’ll have a tough brisket.

It took 12 hrs.

And I do have a meat thermometer!

I make brisket in the oven.
Salt and pepper the meat. Lay the meat over a bed of onions in a covered casserole.
Cook at 325 for 2 hours, then flip it and cook for another hour.
You can add other vegetables for the last hour.
There should be a lot of dark fond in the casserole for gravy.
