I'm bringing a potato dish to a luncheon potluck that's about an hour away. I'll have to leave my house at 11am.

I'd like to make something like potatoes au gratin; the main dish will be a spiral sliced ham.

Suggestions for recipes that will hold the heat well?

I'm not sure it would have time to cook completely in a crockpot in the morning (I'm not an early riser).

Alternatives?

Go ahead and make the potatoes au gratin!

There are many ways to keep your food warm. You can place the dish in a cooler. If you happen to have diapers (holds the heat the best, but thick towels will do too) moisten them with warm water, or better - moist them and heat them in a microwave till they are steaming hot, then wrap the dish with dry towels, and top with the heated towels/diapers (handle with caution), place in a cooler and close the lid.
If you don't have Igloo type of cooler, the cheap made of styrofoam will work too.

Another way is to place your HOT dish inside a folded comforter/warm blankets. Make sure it's wrapped tight so the heat doesn't escape. Put that bundle in a trash bag and place on the car seat/floor.

I guarantee you that the food arrives steaming hot. I have done that many times.
Even at home when I needed to keep food warm for hours, for someone who was arriving later than planned.
