I used to have a fabulous Beef Stew recipe from Dean Fearing. I lost it and wondered if anyone has a good recipe which includes a bottle of stout...

Try this recipe, I made it last night. I substituted a good hearty local beer for the guinness and it was wonderful. You can serve it without doing the crust if you'd like.

I make mine using half stout and half sweet red wine along with a really good beef stock. Awesomely rich and tasty. Cheers!

If you love Beef Stew you will love this recipe. I made this on Sunday and it was fabulous! next day left over was even better.
I bought a whole chuck roast and cut it up. The wine and the bacon really give it a nice flavor.

For something a little different try this some time:

Sear the meat, then add in:

1 can tomato sauce
2 Cups red wine
one packet of dry onion soup mix
2 Bay Leaves

Simmer at least two hours, covered, remove Bay Leaves and serve

I love to dip French bread in the sauce.

I don't have a recipe but when I make stew or short ribs I frequently use beef broth, Guinness, and a little brown sugar to knock down the bitterness of the Guinness to braise them in and it's very tasty along with the veggies of your choice.
