An easy, delicious brown rice salad recipe (ingredients, chicken, pepper)

I made up the ingredients for this salad based on things I was craving at the time! You can just eyeball the amounts, basically enough of each to make the salad nice and colorful!
To warm, cooked brown rice, add:
sliced grape tomatoes (any color!)
sliced green onion
chopped green apple
slight drizzle of olive oil - just to hold it together a little.
serve warm with grilled chicken, fish, or pork, (or alone as a tasty one bowl meal!)
You can play around with ingredients, too. Use chopped fresh mango instead of apple, add some sauteed spinach or chopped broccoli florets, chopped red pepper instead of tomato, even use cooked quinoa instead of the rice!! the possibilities are endless!
this is such a delicious salad, I can eat it every day. Another one-bowl idea: add pulled rotisserie chicken, broccoli and mango to cooked brown rice! yummm!! (you can substitute spinach for the broccoli).
