Also Montshire Museum in Norwich VT might be fun. Montshire Museum of Science, a Vermont Science Center in Norwich, VT with Interactive Science Exhibits and an Outdoor Science Park
VINS is also very interesting: Welcome to the Vermont Institute of Natural Science

If the weather is comfortable, Mt. Peg is a sweet and relatively easy hike right from a lovely Woodstock neighborhood.

I second Billings Farm and VINS.

Quechee Gorge is beautiful Vermont State Parks - Quechee State Park

You can check out glassblowing at Simon Pearce. There is a nice restaurant that takes advantage of the many local products available. Quechee - Restaurants - SimonPearce

I second and third these suggestions, including VINS. For food, I prefer sandwiches from the Woodstock Farmers Market to Simon Pearce, but that's a matter of style/preference. Heck, try both. If it's not raining, the Woodstock Farmers Market has picnic tables in back overlooking the Ottauquechee River.

It's a little bit of a drive from there (about 30-40 min I think), but the Norwich Inn has great food. If you or your wife like beer, Long Trail isn't far from there and their food is tasty. Eat out on the deck by the river. It's beautiful out there. They have a kid friendly menu from what I remember.
