There was a small sap run in January when it was warm so some was made then in some areas. I made my first small batch this week but it was a very small run since I have big trees in shady woods.

I just had some over at the neighbor's straight out of the evaporator. So good! Said sap is running real fast today..the weather is going to be perfect for sugaring over the next few days or so. No leaf buds in my neck of the woods yet.

Tapped my first (and second) tree ever this year. It was already running a week ago in near Georgia. The syrup I got after reducing was a light golden and resembled honey. I was very impressed.

How sweet.

I'll add that down here in CT I went to a great diner the other day and had waffles. OF COURSE I had to have maple syrup and so I paid a little bit extra. Got my syrup in a little glass bottle and guess where it was made? Way up north in Richford. It was grade A and light whereas I usually like the dark amber stuff, but it was very good and especially because my mother's family lived in Richford for several generations. Vermont makes the best maple syrup!
