PIC Steve/ morgan. open date: 3/8/2011. Check #1004 Collected for $540 for a risk level 3 license. Building has not completed final approval. Please fax final approval to Attn: Gene Smith (Fax 645-1708) Inspected and approved to operate as a risk level 3 once building services gives final approval and fax is received. Gave food safety toolkit.

Notes: Observed that the company is date marking sliced meat that is held for more than 24 hours with employees initials and shift numbers. The food code states if it is held for more than 24 hours is must have an actual date on it. PIC stated the sliced meat is not held for more than 3 shifts which is less than 2 days. Will discuss procedures with corporate after consulting with other regulatory authority.
Must ensure all food contact surfaces contacting TTCS foods such as knives and cutting boards are fully washed, rinsed and sanitized at least every 4 hours.
