If food is held for more than 24 hours it must have a date mark. Also, if food is prepared, cooled and then reheated in bulk the risk class of the facility will increase to a Risk Class 4. To maintain a Risk Class 3 the facility can only reheat in individual portions only.

Observed no violations at time of inspection.
Notes: Discussed getting additional equipment for facility including rice cooker, blender, crock pot, dishwasher. All equipment must be commercial grade. It is not necessary to submit plans for the smaller pieces of cooking equipment; however, you might have to submit plans when adding the dishwasher. Any further questions regarding plans /equipment requirements contact our Plans Review Specialist at 645-6191.
Spoke with Assistant Director of facility. She explained that the cook only works part time. Evenings and during the day Thursday's and Friday's. I will come back for standard inspection when the cook is scheduled to work to observed food handling, preparation and ask food safety questions.

Consultation with PIC. She stated cook works part time and makes all the meals for the week. Will contact facility to set up inspection to observe the cook preparing food.
