Employee beverages shall be covered and shall be stored in an area that will not pose as a source of contamination to food and clean equipment. All employee beverages were properly stored during the inspection. CDC Risk Factor: Other – Foreign Substances.

Observed commercial pesticides that were stored and used in the warewashing area. Observed unlabeled chemicals in the kitchen. All chemicals shall be properly labeled, stored, and used to prevent the contamination of food and clean equipment. All chemical bottles were labeled during the inspectionn. Illness log is not kept but illnesses are documented.

Note: Person in charge was able to answer the basic food safety questions. Discussed with the person in charge methods for handling consumer allergies, employee health, required food safety training, handling improperly working cold holding units etc. The person in charge requested information on food safety training for other employees which will be emailed out.
III. Hand washing, Prevention of Contamination from Hands (+)
Note: Stocked and used appropriately.

Note: Most foods are thawed under refrigeration.
VII. Cooking, Reheating, Cooling, Hot and Cold Holding (+)
Note: All temperatures were in compliance. Recommend turning temperature of the walk in cooler down if possible and continuing to monitor all temperatures as there were items inside the walk in cooler bordering the danger zone. The person in charge stated that ice baths were used to rapidly cool food and was aware of the cooling time/ temperature requirements.
