Jul 18, 2011The standard inspection was conducted in May, 2011. The following critical violations were discussed with the manager and corrected.
III. Handwashing
Sanitary hand towels missing from the dispenser located behind the service counter.
VII. Cold Holding
Several cold food items were observed holding above 41F on the sandwich prep table located behind the service counter(see temperature log below).

Investigation conducted do to a complaint about employees not wearing gloves and the walk in cooler not working. During the inspection, all employees had proper hygiene and were wearing gloves while handling ready to eat foods. The walk in cooler is down and was being worked on at the time of inspection. To keep the walk in at 41 F or below, the PIC is leaving the attached freezer door open to cool down the walk in. All foods in the walk in cooler were being held at 41 F or below.
No cause for further action.
Complaint will be closed.

Follow up inspection conducted due to a repeat critical violation for the ice machine air gap. The ice machine is now air gapped and all other critical and non critical violations have been corrected.
