**At the time of inspection, the facility was using a bottle of household bleach as the sanitizer for their low temp dish machine. The bottle was nearly empty and the tube to the pump was not submerged in the bleach. Also, the dish machine was not reaching the required 120F during its rinse cycle. 98F was the maximum temp observed during the rinse cycle. PIC stated that the dish machine is not used for sanitizing. It is used sometimes as a pre-wash before equipment and utensils are washed/rinsed/sanitized in the 3 comp sink.
Spoke with the owner, who stated that within 30 days the facility will be purchasing a new dish machine.
***Until the dish machine is able to reach the appropriate rinse temperature and concentration, it should not be used. The 3 comp sink should be used instead.
****Household bleach is an approved sanitizer, however it is very difficult to reach the required concentrations needed for sanitizing food contact surfaces. Chlorine sanitizer manufactured for use in low temp dish machines is at a much higher concentration than household bleach.
