    Observation: Installed bakery, no hand sink provided.
  • Separation from food, equipment, utensils, linens, and single service
    Observation: Container of sanitizer solution stored directly next to open container of cherries. Broaster cleaner stored next to box of onions and over paper towels.
  • Packaged foods shall comply with standard of identity requirements
    Observation: Baked goods prepared on site, does not have contact information on labeling.
  • Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
    Observation: Working container of green beans/bacon with an expiration date of 11/30/15 in prep table - disposed of.
  • Food shall be obtained from sources that comply with law
    Observation: Rhubarb ice cream topping not from an approved source - will no longer use and find an approved source.
  • Storage of clean linens, single-service, and single use articles
    Observation: "Boats" not stored inverted. Boxes of single use items stored on floor.
  • Foods are cooled using appropriate methods
    Observation: Placing hot, cooked hamburgers in tightly covered container and putting in prep - table to cool. Moved to reach-in cooler at time of inspection.

    Observation: Lettuce in top of prep table at 54.3 degrees. Sliced tomatoes at 45 degrees.

    Observation: Towels used for wiping food contact surfaces not in sanitizer between uses.
  • Light bulbs, protective shielding
    Observation: Missing light shield
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation: upon arrival, mechanical ware washing machine not sanitizing. After priming machine, began working properly. Establishment to test each morning.
  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation: Cooked chicken in warmer at 127 degrees.
  • Handwashing aides and devices, use restrictions
    Observation: upon arrival, rack and tongs in front hand sink, food debris in back handsink.
