No glove change occurred prior to handling burger bun. Requirements regarding when glove changes are to occur were given.
Cutting surfaces maintained Observation: Cutting boards on the prep tables on the cook line are scored with deep, dark scratches.
In-use utensils, between-use storage Observation: In use utensils used to scoop vegetables for the grill are stored with their handles in contact with the food.
Physical facilities maintained clean: Cleaning frequency, restrictions, and methods Observation: Floors under cooking equipment, ice machine, and under bar equipment are soiled.
Physical facilities maintained in good repair Observation: Floor tiles missing on the floor of the cook line and near the back door. Seal on the fry side prep cooler is loosened.
Outer openings are protected Observation: Gap along the bottom of the back door.
Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean Observation: Nonfood-contact surfaces of the thermocouple unit on the broil side is soiled. Overflow shield on the ice machine is soiled.
Air drying of equipment and utensils Observation: Utensils and dishware are not being allowed to air dry prior to be stacked and stored.
