Handwashing sinks-Numbers, capacities, location, and placement Sink with garbage disposal is used for food prep and handwashing. Hand sink must be dedicated for one use only. During discussion with management it was thought that sink on S. wall could be dedicated for handwashing and sink basin with disposal could be used for food prep.
Manual warewashing sinks requirements Last basin of triple sink is inoperable due to lack of hot and cold water. Using N. Bason in double sink to wash, and remaining basins on sink on W. wall for rinse and sanitize. This was not an issue in previous inspectiond due to use of commercial dish machine.
