The procedure used for cleaning & sanitizing of utensils has not been shown to provide adequate cleaning & sanitizing treatment. Specifically, I observed that the firm uses a triple sink for manual warewashing of some food contact surfaces. I observed an employee wash a spatula, rinse it in potable water, then immerse the utensil in the sanitizer solution (bleach water) for approximately 1-2 seconds. The manufacturer's instructions for use of the bleach state that equipment or utensils should be immersed for at least two minutes. In addition, the initial set-up of the triple warewashing sinks include water with detergent in the first compartment, bleach water in the second compartment, and plain water in the third compartment. Management explained that utensils are washed in soapy water, sanitized, then immersed in plain water before air drying.

- Storage requirements
Failure to properly identify toxic cleaning compounds in a manner that protects against contamination of food-packaging materials. Specifically, I observed a plastic sprayer stored in the room just south of the production room. This sprayer contained an unidentified purple liquid, which was described as a degreaser. The plastic sprayer was not labeled to identify the inner contents and the sprayer was stored in the room with packaged glass jars and single-use clam shells.
