Observed cooked meats not datemarked n reach-in cooler. Corrected onsite today but must develope procedures to ensure future datemarking is complete.

Cleaning throughout the kitchen is needed in addition to removing the loose fiberglass insulation around the canned food storage area.

All ware is to be affectively washed, rinsed with clean water and then santized in proper sanitizer solution - then allowed to air dry.

Observed raw beef settng out at 53*, cheese at 55*, horseradsh and salad dressng. All were placed n refrgerator for correcton - However, cook-line procedures must be adjusted to ensure all refrgerated tems reman at 41* or below at all tmes.

Observed bare hand contact whle preparing sandwiches. Corrected during inspection, but must enforce procedures for no bare hand contact of any food that is ready to eat.

Observed soiled ice maker, meat slicer and prep table cutting boards in both kitchen areas, Meat slicer, cutting boards (top and underneath) and all other in-use utensils must be cleaned and sanitized every 4-hours throughout the day.
