Frozen PHF/TCS foods are properly slacked and thawed Observation: Container of frozen raw chicken thawing on the kitchen counter. Employee moved the chicken into the walk in cooler.
Plumbing system maintained in good repair Observation: At time of inspection the three compartment in the kitchen was full of dirty water that would not drain. Person in charge was able to unclog the drain lines and removed the used dish water from the sink basins.
Cleaning of cooking and baking equipment Observation: Debris build up on the inside of the kitchen microwave. Employee cleaned the microwave.
Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing. Observation: No thermometer available in the kitchen prep line cooler.

Duties of PIC Observation: No person in charge at time of inspection. Employee contacted management who came onsite.
Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days Observation:Multiple prepared foods in the walk in cooler and the prep line cooler are not date marked. Employee date marked the items.
Hand drying provided Observation: No paper towels at the bar hand sink.
Handwashing signage Observation: No hand washing reminder sign posted in the women's restroom that staff room.
Physical facilities maintained in good repair Observation: Large hole cut in the wall of the kitchen above the steam table needs to be closed to prevent contamination.
Ice used as exterior coolant not used as a food Observation: Employee coke glass bottle stored in the consumption ice at the soda fountain pop dispenser. Liquor bottles stored in the consumption ice at the front bar. Person in charge removed the items and change the ice.
Sanitization of food contact surfaces - before use and after cleaning Observation: Chlorine sanitizer solution in the kitchen tested low, 0 ppm. Employee made up a new solution at the correct concentration.
PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control Observation: Shredded cooked chicken (125F) was not hot holding at the correct temperature on the stream well. Per employee the chicken had been out for 2 hours. Employee removed the chicken and reheated it back up to 165F them returned to hot holding. Employee also turned up the steam table setting.
