1) Bins of food and single service items (Spoons, forks, napkins) and 2) Shelving in main kitchen area holding food items were about 3 inches off floor. Food and food items must be stored at least 6 inches off the floor for food protection and easy cleaning.

Hot water sanitzier reached 152 degrees F for plate surface temp. Hot water sanitizer must be maintained above 180 degrees F. Plate surface temperature if water is 180 degrees F should reach 160 degrees F plate surface temperature. Dishmachine repair service has been called and will arrive around 3:00pm today. Will use 3 compartment sink until dishmachine is working properly.

Rusty shelving under food preparation sink. Resurface to provide a smooth and easily cleanable surface.
- Mechanical warewashing machine temperature measuring devices, heaters and baskets, and automatic dispensers, and alarms
Rinse water thermometer is not working properly. Replace to ensure adequate hot water sanitizer temperature.
