Observation: Thawing cooked turkey breast at room temperature, turkey was completely thawed - placed in refrigerator.
- Equipment used for heating, holding, and cooling of food shall be sufficient in number and capacity to provide adequate food temperatures
Observation: Milk cooler next to white refrigerator is holding product at 68 degrees. Cannot be used for potentially hazardous foods until maintaining a temperature of 41 degrees or below.
- Test kit provided and used to measure sanitizing solution concentration
Observation: No test strips for checking concentration of sanitizing solution in ware washing machine. REPEAT VIOLATION.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Cut leafy greens (lettuce) out on table at 70 degrees, disposed of at time of inspection.
