PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding Observation: Reheated meatballs were hot holding at 124 degrees. They have been in the warmer 3 hours. They were discarded and I went over the proper re-heating and left a flyer.
