    Observation: Areas throughout the kitchen and front serving area that have missing tiles/deep grooves. No longer smooth and easily cleanable.

    Observation: Items stored on the floor in the dry storage area, back storage area (behind the dishwasher), and walk-in freezer. Items need to be up off the floor at least 6 inches.
  • Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
    Observation: General cleaning throughout the kitchen needed - under equipment, outside of equipment, floor throughout.

    Observation: walk-in cooler and freezer floors need to be cleaned/cleaning needed under and around equipment in the kitchen.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation: thermometer needed at front cooler with condiments for waitress station.
  • Food storage containers identified with common name of food
    Observation: items throughout coolers and walk-in cooler need to be labeled.
  • Maintaining premises free of litter and unnecessary equipment
    Observation: dry storage area needs to be organized.
