Roasts held at a temperature of 130°F or above Observed pork loain holding at 80 degrees. Moved to another roaster to reheat.
PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding Observed pork meat holding at 120 degrees. Items were placed into roaster at 9:00am and there were no documentation of reheating temperature within 2 hrs.
