Observation: A complete disclosure statement is missing from the Edgewater Grille menu. Person in charge has a new menu that is ready to go to print that has the correct consumer advisory posted.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: Thermometers not available in all reach in coolers that contain perishable items.

Observation: Missing bulb cover over lights in the walk in freezer.
- Using a handwashing sink- operation and maintenance
Observation: Hand washing sink on the Edgewater Grille service line drips after the water is turned off. Hand washing sink by the walk in freezer in the kitchen was blocked with equipment. Equipment moved.
- Sanitization methods - hot water, chemical
Observation: High heat sanitizer dish machine is in disrepair. Items being washed are not able to reach a minimum surface temperature of 160F when inspector ran multiple thermo strips through. Person in charge shut down the dish machine and placed a service order. Dishes will be washed in the three compartment sink.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Two door reach in cooler on the Edgewater Grille containing breakfast items was not able to maintain proper cold holding. Half & Half (52F), Ambient air (56F) Person in charge removed the cooler for maintenance and discarded the product.

Observation: Wet mop heads stored in the room service mop room were not hung up to allow drying.

Observation: Steel cleaner and antiseptic wipes stored on counter in the room service preparation area.

Observation: No hand washing reminder sign posted at River bar hand sink.

Observation: The chemical sanitizer at the River bar dish machine tested low, 0ppm. Person in charge made a service call. All dishes will go to main kitchen dish machine until repaired.

Observation: Water leak observed from left faucet at the three compartment sink in the dish room. Hot water pressure is low and water temperature changes as hot water is running at the hand sink near the raw meat walk in cooler.
