Routine
Roasts held at a temperature of 130°F or above Retail case-reach in cooler temped at 47 degrees. Corrected at time of inspection-the manager was removing all TCS foods from the shelves and putting them in totes to discard-this included several gallons of milk, several indiviual milk drinks, bags and packages of cheese, several sandwiches prepared in the kitchen and several manufactured sandwiches. The manager had called the repairman and the repairman came while I was here. The totes were labeled Do not use and will be dumped after inventory is taken.
